Slow Cooker Lamb Shanks with Fennel & White Beans

This recipe takes a bit of prep work but I think its gonna be worth it!!!



6 Lamb Shanks (about 4 lb)
2 Tbsp vegetable oil
1 onion finely diced
1 1/2 cups each diced carrot and fennel
2 cloves garlic minced
1 tsp each dried thyme and fennel seeds
1 cup dry white wine
1 cup sodium reduced chicken stock
2 cans (each 19 oz/540ml) white navy beans, drained and rinsed
1/2 cup chopped drained oil-packed sun-dried tomatoes
1/4 cup chopped fresh parsley

- sprinkle lamb with salt and pepper.  In a large skillet heat half of the oil over medium high heat and brown lamb.  Transfer to a plate.  Drain fat from pan
- Heat remaining oil fry onion, carrot, fennel, garlic, thyme and fennel seeds, stirring occasionally until softened.  5 mins
- Add wine, stock; bring to a boil, stirring and scrapping up brown bits from the bottom of the pan.  Pour into slow cooker.
- Add navy beans and tomatoes to slow cooker.  Add lamb, pushing into liquid.  Cover and cook on low for 6 hours or until meat is tender and separates easily from the bone.  Transfer lamb to a plate.  Skim off fat in slow cooker.  Stir in parsley.  Spoon into shallow bowls top with lamb.

As long as you use Gluten free chicken stock this recipe is gluten free.

WHAT??? February Already??? !!!

February is here.  And we couldn't be happier.  Unfortunately we didn't make our incentive trip but we were very close this time.  And we are going to make it for sure next time!!  I am confident of it that we will get there.  Its just a matter of time.  We are still happy even tho we didn't make the trip.  Matt and I both worked very hard and feel a huge sense of accomplishment.  Plus we grew our team and our team members continue to thrive and build their Scentsy business!

I got my new car and I simply cannot tell you how much I love it.  I got the Kia Soul.  Its one of the best valued vehicles on the market.  Since I got my car I've been catching up on Scentsy deliveries.  All my Scentsy delivers arrived just in time that my new car did.  Whoohoo!!!  Scentsy being delivered in style!


So things have been busy for us.  Matt has been super busy with his Real Estate and working hard for his clients.

We also decided that we are keeping our little foster dude, and have renamed him (accordingly).  Yep we now have a little Anakin Sidewalker.  He is the cutest little man but he does have a little mischief in him.  He arrived thru another rescue that got him from a back yard breeder.  Anakin's mom and dad were brother and sister.  This little man had several medical conditions since birth.  He was from a litter of 8 puppies and all the puppies were sold to make money for the owners.  I feel awful because I wonder how many of his sibblings also have the same issues.  We ended up with Ani because nobody wanted to euthanize him nor did they want to pay the money to find out how to fix him. Basically the back yard breeders did not want to take responsibility for their actions.   Rescue a Boxer stepped up and brought this boy into our care.  We paid for his heart scans and medical workups.  After appointments with specialists it was determined that this young pup has a grade 5 heart murmur and  pulmonic stenosis.  But the worst part of it is that he also has a severe case subaortic stenosis.  Basically the wall of his heart is almost 5 times thicker than it should be.  Blood doesn't travel thru his heart very well and the vets say that his life spam is bleak.  He also has fissures in his anus and does not have control of his bum.   Don't feel bad for him!!  He is a REAL puppy and you wouldn't know that he is sick.  He has the energy of a pup and more to spare!  He is living a comfortable and healthy life thanks to Rescue A Boxer and the care that was provided by the vets and specialists.

Because of his heart issues he isn't a good candidate for adoption.  Let's face it........this little guy wasn't going anywhere anyhow.  He walked right into our house and captured our hearts.  He is definitely part of the Star Wars pack.




I cannot stress the importance of rescuing a dog.  There are so many homeless dogs that need and deserve a great home.  It is estimated that 3 to 4 million dogs are euthanized in the US each year.  That is a huge amount.  A number that keeps me awake a night.  If you feel that you must have a puppy please contact a reputable breeder.  A reputable breeder breeds the dogs to better the health of the breed.  They know what they are doing and aren't just playing God.  They do health and temperment testings on their dogs.  They aren't  always breeding their dogs and aren't having litters after litters.  The reputable breeder will show you where the mom lives and you will see how well the mom is taken care of.  We hear of many sad stories and its heartbreaking.  Recently I was told about how a backyard breeder bred his female and was selling the puppies on Craigslist.  The mom normally lives outside except they allowed her inside just to birth her pups.  Once the pups were birthed the mom was banished outside again.  They only brought her inside to nurse the pups.  All the puppies were sold without any health testing done on the mom or the dad or the puppies.  They were sold before they were old enough to leave their mom.  pups should stay with their mom till at least 8 weeks.  These pups were sold at 5 weeks old.  The owner is also selling the mom on Craigslist and is advertising her as a good breeding dog, that will provide the buyer with a good income of puppies.  It breaks my heart that people are so cruel and so heartless.  Please people rescue!  Adopt a dog, there is one out there that needs you! 


Next week I am going to Scentsy Spring Sprint with my team.  I'm looking forward to it because a friend is coming along as well.  She has been on the fence about joining Scentsy.  I was on the fence before too (not for long mind you) but it wasn't long before I took the plunge.  And I'm so glad that I did.  I cannot tell you how much of a positive impact it has had on our lives.  Scentsy has 3 brands.  There is one there for everyone!  I represent all 3 brands of Scentsy (Scentsy Fragrance; Velata and Grace Adele).  Truth be told Scentsy Fragrance is still my favorite! 

I am excited to learn all about the new things that Scentsy is going to be doing this year.  PLUS I get a free gift box with new products!!!

February Spring Sprint means that there is only 5 more months till the BIG Convention!!!  Just in case I didn't tell you.....it's in St. Louis this year!  And with it being Scentsy's 10 year anniversary its guaranteed to be HUGE!!!

Happy New Year Everyone!!!

Today is January 1st, 2014.  I am positive that the new year will bring many good things into our lives.  Although last year wasn't fantastic, I choose to look at everything that was positive in our lives.

We are blessed for our good health and the love and good health of our families.


Matt & I promoted to SuperStar Consultants and our team grew!  We were fortunate enough to make many new friends and create many new relationships with so many wonderful people.



We changed the name on our beloved rescue from "Without Borders" to "Rescue A Boxer".  We had a very successful fundraiser and raised much needed money.  Officially our name has changed January 1st 2014.  On the books we are "doing business" as "Rescue A Boxer".

Matt & I welcomed our new little bundle of joy into our home in October.  Mr. Buster Brown came to our home as a "Medical Foster" and with the help of many experienced vets and specialist's (along with a very special diet), he has made a wonderful recovery.  This little puppy does not know he is even sick.  In December Matt and I decided to rename him in order to fit in with his Boxer pack.  He is now officially Anakin Sidewalker and it looks like he may become a permanent part of our family.  He obviously fits in perfectly with our kids!



In January we celebrated my Dad's 80th birthday and my parents celebrated their 50th Wedding Anniversary in November.  

I am so proud of my husband Matt.  He started an exercise regime and loved it.  He has been running on a regular basis and has lost a lot of weight.  He is enjoying it so much and setting and achieving many goals.

Matt and I had the pleasure of travelling to Indianapolis to experience the Scentsy Family Convention.  Las Vegas was my first convention (in 2012) but in 2013 year it was Matt's first.  WHOA what an amazing time we had!  We love our Scentsy brother's and sister's and can't wait to see them again in St. Louis in July! 


Matt ran his first 5K marathon (I walked it), along the beautiful river in White Water Memorial Park in Indy. Matt of course caught a bug for running now! and for SCENTSY!!! 





I know that many people make New Year's resolutions.  With some it is a tradition.  I haven't made New Year's resolutions in years.  Personally for myself I prefer to make goals.  I make goals every day, every week, month and year.  

My goals for this year is to try to listen more and talk less.  To try to be more compassionate and less judgemental of others.  I want to try to spend more time with my family and spend time looking after myself.  I want to rid my life of negativity and only surround myself with positivity.   I want to make more "Double Yays".  I want to make time for the people in my life who deserve it and not allow people in my life that don't.  Professionally I want to be able to build my Scentsy business and hope to .....errrr um I will be earning the incentive trip and become Director this year!

WE GOT PROMOTED!!!

Well November started with a big bang!  We were off and running.  We had many Scentsy parties booked, met some really awesome people and had some Christmas Markets booked.  Matt and I were busy busy busy - but LOVING every minute of it!

In November we were officially promoted to Super Star Consultants, our team grew to be a group of 9.  #doubleyay !!! We are pleasantly surprised at how quickly things are moving.  I never even imagined that when I signed up to be a Scentsy Consultant in 2011 that I had even a glimmer of a chance to make any type of profit.  It really started out as a fun hobby and it definitely has been that - but MORE!

This month alone we made enough for 2 car payments and an insurance payment.  Guess what???? it's November 28th and there is still 2 more days left in this month and I haven't even finished entering in my orders yet!

Our dreams are quickly becoming a reality.  I was told by my sponsor that the Incentive Trip is very easily achievable.  When she told me that I kinda thought to myself "Yah right for you maybe". ...... but now I totally see what she meant.  It's very realistic and it has been so much fun!  I've had a blast!  And I'm still going for it!  I plan to make Director very soon and to earn the Incentive Trip.  Do you think I'll make it???

Top 10 Ways to Ruin a Job Interview


Every single person the world over will have his or her own compendium of excuses when it comes to why exactly they failed to bag the job following an interview, though suffice to say it is always somebody or something else’s fault. Not true of course as the only person ever standing in the way of untold success is you yourself, though it is surprisingly simply to blow and interview in its entirety by making what could be described as minor slip ups. With the in mind, the following brings together 10 of the best/worst ways to blow a whole interview, in most cases without even knowing it:

10 Too early or late Most will of course know that arriving to an interview too late is never a good idea to say the very least, for obvious reasons that require no explanation. On the other hand, trying to show eagerness by arriving incredibly early can in fact have an equally detrimental effect on your chances. Indeed, not only will it likely be interpreted that you have no realistic ability of keeping to a sensible timeframe, but it is also never a good idea to let your potential employer believe you have far too much free time on your hands…even if you do!






 

9 Career path clashes We are all told to be ambitious and talk confidently about where we would like to see ourselves in the future, though if this happens to be in a bigger, better place above and beyond the realms of this particular post, it may be best to hold back a little. No employer wants to feel they are a stepping stone in your much more grandiose plan, therefore be careful not to flag up clashes of interest.

8 Cracking jokes Actually, this is something that can either make or break an interview as the ideally suited joke that really hits the nail on the head could make all the difference in the world. Sadly, this is the case in about one out of every thousands attempts with the rest breeding the most awkward and hideous aftermath most could possibly imagine. As such, unless you really want to roll the dice and hope you don’t fall in with the other 99.9%, keep your jokes to yourself.
 
 

7 Sucking up There is something of a fine line between respect and proverbial brown-nosing at a rather sickening level, which far too many will find themselves crossing without realizing it. As a rule of thumb, avoid compliments to anything other than your basic first impressions of the business as a whole. Indeed, even if you do find the interviewer’s tie a quite stunning example of a renaissance mosaic interpretation, you will only creep him out by telling him this.
 
 

6 Insulting old bosses This is a hugely overused tactic in millions of cases every day and can land you in more trouble that it is possibly worth. Of course, on the surface it seems entirely reasonable and perhaps even beneficial to call your old boss every name under the sun and criticize their running of the business as a whole, thus showing your motivation to move on to bigger and better things, right? Wrong, as all this shows is a lack of loyalty and respect that will instantly discourage your new boss from taking you on, as how can they possibly know that you won’t speak the same way about them simply for kudos?

5 Acting like God’s gift Of course you think you are the ideally suited person for the job and indeed you want the interviewer to believe there are none better, but crossing the line into showing off and arrogance will pretty much bring about nothing other than a swift end to the interview, not to mention your chances. Nerves and concern are attractive traits as they show thought and care – arrogance displays a potentially careless attitude that no company the world over would find appealing.

4 Dressing for the beach 
Despite the fact that the business in question markets Hawaiian shirt or perhaps the latest line in flip-flops, this does not mean that you should turn up for the interview looking like you’ve just strolled in randomly from the streets. True, in many cases you don’t have to go overboard, but the number of times candidates blow their chances before even saying a word by turning up in shorts is staggering, not to mention rather tragic.

 3 Dressing for a funeral
On the flipside to the above example, depending on the particular position in question you may find that taking your appearance far too seriously can count you out of the running to an equal extent. If all you own is the funeral suit you picked up a decade or two ago from a charity shop, consider upgrading to something a little more appropriate, even casual if the situation calls for it.

 2 Rehearsing answers
Always guaranteed to see so many interviewers the world over cringe as if hearing fingernails dragging down a blackboard, rehearsing answers down to the letter is simply the worst possible way of expecting a good result when posed important questions. Think about it…if you’ve found all of your answers on the good-old internet then it stands to reason that so will millions of others before you. Showing this level of predictability and lack of creativity will see the application in the trash before it even had a chance to get off the ground.

 

1 Stupid closing questions
The interview has been productive, pleasantries exchanged and expectations are high, so there really is nothing to worry about in the very final moments, right? Wrong, as the questions you choose to ask the interviewer have every potential to blow all positive impressions made so far. For example, ‘I won’t have to work overtime will I?’ or ‘what if I need an extended vacation?’ or ‘Well it doesn’t seem nearly as bad a job as I expected!’ will likely make this the first and last encounter you have with this particular company, undoing every effort made up until this moment and labeling you for life as a bona-fide fool.
